7/19/11 Katie's Healthy Eating Journal: Tuesday

So, as I wrote yesterday, the vacation began with a trip to Urgent Care.  Are you thinking, "Welcome to parenthood?"  Well, the first few days despite our son having pink-eye and an ear infection were great.  We had delicious meals on the water.  I even made pretty healthy choices.  One night I had grilled tuna with caribbean salsa on top of rice with mixed fresh veggies.  Yum!  Another evening I got the shrimp cocktail, a 1/2 baked potato, and mixed veggies.  It was all so flavorful.  I love having fresh seafood and vegetables.  Both nights we ate out I had a salad with vinegar so my "fat" could be a glass of wine.  But, unfortunately by Wednesday evening we had learned that a close family friend had passed away.  It was a shock and devastating.  She was only 59 years old and a wonderful woman.  We were eager to get home so we could be with the family and ensure we were there for the visitation and funeral.  We ended up only leaving a day early but it didn't really matter; we weren't exactly in the vacation spirit anymore.  She's definitely a reminder to never take life for granted.  You never know what could happen.  More tomorrow...
